Research Summary: For my master’s thesis project, I will be assisting with a dietary intervention in rural Zambia. The purpose of this project is to decrease malnutrition and increase household food security, while increasing women’s empowerment. This will be done by introducing sustainable food preservation methods through training the women of this population to become experts in mushroom farming. They will learn how to grow mushrooms and preserve them using a solar dryer, providing the community with access to mushrooms year-round. I will be going in-person before and after the intervention to collect primary, nutritionally relevant data of the population.
